Strawberry Cucumber Salad

While it’s common to make fruit salads or vegetable salads, it always provides a refreshing and exciting twist when the two are combined. That’s what I did in this pretty and tasty twist on a cucumber salad that includes luscious strawberries.
With the combination of cucumbers and strawberries in this snack or side dish, you get a blend of soft and sweet strawberries with crisp and light cucumbers. The mix of deep red and light green adds to the display, which I like to enhance by overlapping slices with an alternating pattern between fruit and vegetable.
If you’re not overly fond of strawberries or cucumbers, feel free to substitute one or even both with the same concept of fruit plus vegetable. For instance, you could combine cucumbers with mango or strawberries with sliced celery.

Ingredients
- 16 ounces fresh strawberries, sliced
- 1 large cucumber, peeled and thinly sliced
- 2 tablespoons balsamic vinegar
- 2 tablespoons maple syrup or honey
- 1/4 teaspoon kosher salt
Instructions
- Trim off the top of strawberries and slice them horizontally into thin circles. Peel and slice cucumbers.
- Arrange slices on a serving platter, overlapping layers.
- Whisk vinegar and maple syrup together until blended; drizzle over the salad. Then sprinkle with salt. Serve.
