When it comes to serving up a healthy side dish, if you ask me, bok choy doesn’t get enough publicity. Not only does it provide a ton of nutritional benefits, but it’s super quick and easy to make. You can eat baby bok choy steamed, roasted, or sautéed, and season it in so many different ways. These cute, miniature tree-looking veggies can just never get boring.
This savory, Asian-inspired sautéed bok choy recipe requires 10 minutes of time from prep to finish and is made with only six ingredients: garlic cloves, shiitake mushrooms, olive oil, sea salt, and coconut aminos.
It’s simple, flavorful, and perfect for weeknights when you need something healthy in a pinch. If you don’t have coconut aminos on hand, feel free to substitute a tablespoon of soy sauce or more. Don’t add any extra salt if you use soy sauce.
If you want to get a little adventurous, there are many ways you can spice up the flavor of this vegetarian recipe. You could add fresh ginger root to the pan at the same time as the garlic cloves, creating a garlic-ginger mixture to sauté the bok choy and mushrooms in. Fish sauce, a drizzle of sesame oil, or red pepper flakes would also add authentic flavors.
If you’re serving this sautéed baby bok choy as a side dish, it serves four people. You could also use this recipe to add to rice or quinoa bowls. If using as a main dish, it will serve two people generously when mixed with the grain of your choice.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 cloves of garlic, minced
- 1 pound baby bok choy, rinsed and halved lengthwise
- 10–15 shiitake mushrooms, halved (about 1 1/2 cups)
- 2 tablespoons coconut aminos
- Salt to taste
- White sesame seeds for garnishing (optional)
Instructions
- Heat oil over medium-high heat in a large skillet or a frying pan until hot, about 40 seconds to 1 minute.
- Stir in minced garlic and quickly sauté for 30 seconds or until fragrant.
- Add baby bok choy, followed by shiitake mushrooms. Stir frequently until the bok choy starts to wilt.
- Add coconut aminos. Cook and stir until well combined.
- Taste and add a pinch of salt to taste. Garnish with sesame seeds if desired. Dish and serve.
Notes
If using dried shiitake mushrooms, soak the mushrooms in water for 10-15 minutes until they are soft. Drain then cut in half.
