Healthy Vegetable Slaw
You know that nothing here on this site is really complicated to make. I like simple and quick. Being efficient feels great. But sometimes, especially when the weather is bringing you down, you feel slow and lazy…
It’s been raining for a whole week in San Francisco, making me feel a little under weather. I wanted to make some comfort food to dilute the blueness in the air but shockingly found out that the temperature of my oven wouldn’t go up to what I wanted.
My oven is broken!
Without one of the major cookwares in the kitchen, I felt a little helpless at the beginning. Baking and food blogging has become a big part of my life ever since we moved to the States from China, where ovens can rarely be found in Chinese people’s kitchens.
I am anxiously waiting for my oven to be fixed. In the meanwhile, I have been trying to make some stupidly easy stuff for the past week. The kind that does not even require heat – no baking and no cooking. The kind that perfectly falls into “simple and quick”, yet so refreshing and delicious, just like this vegetable slaw.
If I must find a word to describe it, it would be CHEERFUL!
The ingredients required for this dish are so common that I bet you have a few in your fridge already.
It calls for the most basic seasonings.
It’s so darn healthy.
The flavor is refreshingly good. I especially love the radish sprouts at the end kicking in a little hotness and leaving a mixed after taste.
Whether you feel lazy or want to clear your stomach, this vegetable slaw does it for you. All you need to do is to shred the veggies and season them. Done. We enjoyed eating it alone but you know what? I can image it to be great for sandwiches and tacos!
So here comes to a cheerful dish for a lazy day. Until my oven is fixed…Cheers!

Sharon, your recipes sounds absolutely delicious! I have to tell you though I’m sooooo envious of your food photos! I’m a novice and still working at it. My biggest detriment is lighting at home. And I think I may have found a fix for that but still will post old food posts with the “yellowish” pics. By the way, we’re neighbors so to speak. Phoenix, my Golden Retriever, and I live in Reno! Have a great day 🙂
Hey Mike! Thank you for the compliment! I agree that lighting is probably the most important factor of photographing, especially when it comes to taking photos of food. I usually take photos from my living room where it gets the most natural lighting during the day. What’s in your mind to improve lighting at home? By the way, either it’s because Phoenix loves the camera attention or it’s because you are an awesome photographer who is able to capture all these precious moments of Phoenix’s life, your photos are heart-warming! I vote for both! 🙂 Enjoy the rest of your day!
I love how bright and colorful this vegetable slaw is! Totally going to try this soon.
Pinning for now!
Thanks Abbie! I hope you like the flavor too! Btw, great job on your blog, girl! Very impressive! 🙂
Love the colors and textures – you make art of your food. 😀
Haha… being fed is always the priority. It happens to be a little artistic, which is great! 😀
