It’s been raining for a whole week in San Francisco, making me feel a little under weather. I wanted to make some comfort food to dilute the blueness in the air but shockingly found out that the temperature of my oven wouldn’t go up to what I wanted.

Without one of the major cookwares in the kitchen, I felt a little helpless at the beginning. Baking and food blogging has become a big part of my life ever since we moved to the States from China, where ovens can rarely be found in Chinese people’s kitchens.

I am anxiously waiting for my oven to be fixed. In the meanwhile, I have been trying to make some stupidly easy stuff for the past week. The kind that does not even require heat – no baking and no cooking. The kind that perfectly falls into “simple and quick”, yet so refreshing and delicious, just like this vegetable slaw.

If I must find a word to describe it, it would be CHEERFUL!

The ingredients required for this dish are so common that I bet you have a few in your fridge already.
It calls for the most basic seasonings.
It’s so darn healthy.
The flavor is refreshingly good. I especially love the radish sprouts at the end kicking in a little hotness and leaving a mixed after taste.

Whether you feel lazy or want to clear your stomach, this vegetable slaw does it for you. All you need to do is to shred the veggies and season them. Done. We enjoyed eating it alone but you know what? I can image it to be great for sandwiches and tacos!

Description

A healthy vegetable slaw only takes 10 minutes of your time.


Ingredients

Units Scale
  • 1 cup red cabbage, shredded
  • 1 cup carrot, shredded
  • 3 cups lettuce, shredded
  • 1 cup cucumber, shredded
  • 2 teaspoons apple cider vinegar
  • 3 tablespoons olive oil
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/4 cup radish sprout

Instructions

  1. Shred all the vegetables (except sprout) and put them in a large bowl.
  2. Season with olive oil, salt, vinegar, and pepper. Stir until even. (Add more seasonings if desired.) Garnish with radish sprout and serve.
