Easy Chicken Salad Recipe
A delicious chicken salad recipe featuring the perfect shredded chicken, crunchy croutons, and a creamy tahini dressing.
This chicken salad recipe is a twist on the classic Caesar salad. It’s super easy to put together when you already have some shredded chicken prepared. I like to use sous vide shredded chicken for this recipe, but any shredded or freshly baked chicken will do.
A bottle of store-bought Caesar dressing indeed serves the purpose if you want a more traditional flavor, but I recommend you try my creamy tahini dressing for your chicken salad. It’s sugar-free, creamy, savory, nutty, and ready in five minutes. It adds more protein, depth, and healthiness to your salad. I hope you enjoy it!

Description
A delicious chicken salad recipe featuring the perfect shredded chicken, crunchy croutons, and a creamy tahini dressing.
Ingredients
- 4 slices thick crusty sandwich bread, cut into cubes
- 3 tablespoons olive oil, divided
- Salt and pepper, to taste
- A pinch of paprika
- 12 ounces shredded chicken (from two chicken breasts)
- 1 large romaine lettuce, chopped
- 1/4 cup red onion, very thinly sliced into rings
- 1/2 cup tahini dressing or Caesar dressing
- 1/3 cup parmesan cheese, shaved
Instructions
- Make the croutons: Heat oven to 400°F (200°C). Spread bread cubes over a baking sheet and toss with salt, pepper, a pinch of paprika, and 2 tablespoons of olive oil. Bake for 8-10 mins, turning the croutons a few times during cooking so they brown evenly.
- Heat the chicken (optional): Heat a skillet over medium-high heat. Once hot, add the remaining tablespoon of olive oil. Place the precooked shredded chicken in the skillet in a single layer. Sear the chicken and warm it up for about 90 seconds on each side or until it’s brown outside. Remove from heat and set aside.
- Assemble the salad: Prepare a large mixing bowl. Add romaine lettuce, red onion rings, ⅔ shredded chicken, ⅔ croutons, and most of the dressing. Mix well. Scatter the rest of the chicken and croutons and drizzle with the remaining dressing. Spread the parmesan on top and serve right away.
