Cupid’s Ice Cream Sandwiches

“What are we doing on Valentine’s Day?” Stephanie asks.
“I don’t know. Nothing?!” The answer came out from Felix’s mouth so quickly. (He sounds exactly like his brother, my husband Han.)
Stephanie gives Felix a look. I thought it’d be funny if I ask Han the same question, knowing the answer would be exactly like Felix’s. “Hey babe, what are we doing on Valentine’s Day?”
“I don’t know.” Han shrugs his shoulders, “What’s so special about it? Every day is Valentine’s Day, isn’t it?”
“EXACTLY!” Felix backs Han up.
Stephanie and I look at each other and shake our heads at the same time.
Han strongly believes that if someone is in a real relationship with the right person, every day is a holiday. Well, I can’t really argue with that because it’s so true. That’s why we’ve never got upset with each other if we don’t do anything special on a special day. To us, nothing really beats a candlelight homemade dinner and then cozying up on the couch for a good movie.
If that’s your cup of tea, I’ve got something to cozy up your Valentine’s Day even more – Cupid’s Ice Cream Sandwiches! In this post, I’ve created a step-by-step photo guide to show you how to make them. It’s easier than you think. This recipe yields 16 2.5-inch heart-shaped ice cream sandwiches or 12 2.5-inch ice cream sandwiches and 2 6-inch ones. I know that’s a lot. But since you’ve decided to go for it, might as well make enough for later. Just wrap each sandwich in foil and freeze them.
Enough said, let’s get straight to business.
Make The Cookie Dough
First things first. The most efficient way to make your cookie dough is to use a KitchenAid. If you don’t have one, a hand-held mixer will do the job just fine.
#1 Combine 1 3/4 cups all-purpose flour and 3/4 cup cocoa powder.
#2 In a large bowl, 3/4 cup softened butter and 3/4 cup sugar on high speed until fluffy.
#3 Beat in 2 eggs and 1/2 teaspoon vanilla extract until well blended.
#4 Reduce mixer speed to low and beat in the flour mixture.
On a side note, have you heard of a silicone covered paddle? That would be the perfect attachment to your KitchenAid for making this cookie dough because nothing sticks to it. I didn’t know this thing exists until my dear fellow Instagrammers mentioned it.
#5 Divide dough in half, wrap with plastic wrap and refrigerate for an hour.
Prepare Ice Cream
#6 Line 9 x13-inch baking pan with plastic wrap. Transfer 2 pints vanilla ice cream from its package and smooth ice cream evenly into pan. Cover with plastic wrap and place it in your freezer.
Bake The Cookies
#7 Dust a large surface and a rolling pin with cocoa powder, roll out one of the cookie dough to 1/4-inch thickness. Use a 2.5-inch heart-shaped cookie cutter to cut out cookies, then transfer to a baking sheet. Set the cookies 1 inch apart from each other. Do the same with the other cookie dough.
Optionally, use a larger cookie cutter for different-sized cookies.
#8 Bake the cookies at 375°F for 12 minutes and let cool for 2 minutes before transferring to wire racks. Bake in batches if necessary.
Make The Sandwiches
#9 Once the cookies are completely cool, take out the ice cream from your freezer. Use the same cookie cutter to cut out heart-shaped portions of ice cream.
#10 Sandwich the ice cream between two same-sized cookies, and place in freezer until ready to serve.
Optionally, roll the side of the ice cream sandwiches in sprinkles before freezing.
