Description

This 20-minute prawn and leek frittata is an ideal savory breakfast to fuel your day with high protein, fiber, and pure satisfaction.

Ingredients

Scale
  • 5 large eggs
  • 4.2 oz. (120g) low-fat cream cheese, divided
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • 3 large leeks, sliced, white and light green parts only
  • 5.3 oz. (150g) raw peeled large shrimp
  • 1/2 teaspoon Italian herb mix
  • Fresh parsley for garnishing

Instructions

  1. Beat the eggs together and whisk in half the cream cheese. Season to taste with salt and pepper. Set the egg mixture aside.
  2. Heat olive oil in a medium skillet. Add the leeks and cook for 5 minutes. Stir in the shrimp and herb mix, and cook for 1 minute.
  3. Pour the egg mixture over the shrimp and leeks, dot with the remaining cream cheese, and cook on medium heat for 5-8 minutes. Meanwhile, heat the broiler on high.
  4. Finish the frittata under the broiler for 2 minutes until just set on top with a slight wobble.
  5. Garnish with chopped fresh parsley and serve with a hot sauce if desired.

Notes

Don’t throw out the dark green part of your leeks. Put them in soups or use them for homemade broths.
