This fennel apple salad is a gluten-free and vegan-friendly healthy side dish that takes only 10 minutes to whip up. So crunchy and yummy!

- 1 small Granny Smith apple or another crisp variety, cored and thinly sliced
- 1 small fennel bulb, thinly sliced
- 2 celery stalks, thinly sliced
- Salt and pepper, to taste
- 2 tablespoons extra virgin olive oil
- 2 tablespoons apple cider vinegar or white wine vinegar
- 1 tablespoon honey
- Fresh thyme leaves or fennel fronds (optional)
- 1 ounce walnuts, toasted and roughly chopped
Instructions
- Combine thinly sliced apple, fennel, and celery in a large bowl. Season with salt and pepper to taste, then dress with olive oil, vinegar, and honey. Toss well and adjust the flavor by adding more vinegar and/or honey if desired.
- Garnish with fresh thyme or fennel fronds (if using) and top the salad with toasted walnuts. Enjoy!
