- 2 large lemons, juiced
- 1/3 cup extra-virgin olive oil
- 2 tablespoons Dijon mustard
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
Instructions
- In a small bowl, whisk fresh lemon juice, olive oil, Dijon mustard, salt, and pepper together until well blended. Transfer to an airtight container. Drizzle over salads.
Notes
- A good and healthy ratio between the lemon juice and the oil is 1:1. So your lemon vinaigrette dressing might yield more or less depending on the size of your lemons.
- The lemon vinaigrette dressing can be stored in the fridge for up to a week.
- Shake well before using.
