Description
Corn and black bean salad tossed in a flavorful homemade garlic lemon aioli. Enjoy a variety of textures, colors, and flavors.

- 1 1/2 cups cooked sweet corn kernels (I used sous vide corn on the cob; you can use canned kernels, drained)
- 1 (15-ounce) can black beans, rinsed and drained well
- 1 red bell pepper, diced
- 1 medium avocado, diced
- 4 stems green onion (green and white parts), chopped
- 2 tablespoons chopped parsley
- 1 cup Garlic Lemon Aioli or store-bought aioli
- 1/2 teaspoon smoked paprika
Instructions
- Place corn kernels, black beans, red bell pepper, avocado, green onions, and parsley in a large mixing bowl.Â
- Pour the garlic lemon aioli over all the prepared ingredients, then dust with smoked paprika. Mix well and serve.
